What Are Some Simple Summer Meals to Make After a Long Day at the Pool or Beach?

Question: Do you have any great summer recipes that are a breeze to get on the table after a long day at the beach or pool?
Answer from Roe McKernan-O'Brien (mom of 4): Make your dinner in the morning. I am always outside at 8 a.m. to 9 a.m. grilling chops/chicken/veggies, etc., which I then put it all in the Corningware. When we come home from the pool, I just reheat. No waiting. I pretty much do this in the school year also. Except, I have the meal prepared and all I have to do is put it in the oven at 4 p.m. It makes dinner/homework hour much smoother.

(mom of 2): My family loves this: butterfly a chicken breast and stuff it with minced garlic and olive oil, slice of tomato (right out of your garden) and whole basil leaves (right out of the garden). Toothpick this closed and throw on the grill. Hit it with a squeeze of fresh lime juice. YUM! Easy and very summery. (Don't forget a little salt and pepper).
Answer from Michelle Cluver (mom of 2): We rely on supermarket rotisserie chickens a lot in the summer. There is a lot you can do with an already cooked chicken. We also eat a lot of sandwiches in the summer. just asked Ben what his favorite summer recipe was, and he said "whatever is on the plate". What can I say, my kids are easy!
Answer from Bretany Pilko (mom of 2): I love making pizza on the grill, and it's so easy and fast IF you remember to take the dough out of the freezer in the morning before you hit the pool or beach. I buy frozen pizza dough in the freezer section at Acme. It comes packaged with two balls–one is usually enough for our family of four. I just throw the frozen dough ball in a bowl, lightly brush it with olive oil and cover it with a dish towel. When I get home after a long day, it's huge and ready to work with. I do simple ingredients of cheese & pepperoni for the boys, but for the grown ups I like to get creative and use fresh veggies, different cheeses and sauces etc. Plus, besides the cutting board, there are no dishes to clean since I do everything on the grill.
Answer from Heather K (mom of 2): this is not a strength of mine. I always feel no matter what, I have to plan something ahead of time. But what I have been doing is giving the kids raw cut-up veggies with dip right away. While they eat their veggies, I'll prepare something else to go with it.
